Riesling! In a can! Yes, it's here, and ready to go to the beach, by the river, on horseback, under the freeway, and a few other favorite outdoor recreational drinking spots where bottles don't have a place (coozie's optional). A full 375ml of natty (only 25 ppm sulfur total) organically grown riesling from Arroyo Seco in Monterey Co; an area defined by it's name. This dry river has flooded seasonally for millenia, depositing large granite boulders and cobbles across the Arroyo Seco floodplain; exactly where Zabala Vineyard is located. Arroyo Seco is also on the receiving end of the relentless northwest winds from spring through late summer.

This differs from our other style of riesling in a couple of ways. These grapes were picked over two different passes, in mid to late August at 18.5 and 20 brix respectively. They received the traditional 24 hrs maceration without SO2, and fermented spontaneously at a low temperature in stainless steel post pressing/racking. The wine was kept cool to inhibit malolactic fermentation and leave a tiny bit of residual sugar (5 g/L) where the sweetness is undetectable, but gives a little weight and body to the wine. It is filtered, but not fined, with just a small amount of SO2 for preventing the ML fermentation occurring in can. There is a slight effervescence due to the high residual carbon dioxide left from primary fermentation.
